Summer Squash Salsa

A summer time switch up from a tomato based salsa by using yellow squash or zucchini. So fresh and flavorful and could be easily added to tacos, veggie bowls or as a topping to my Chipotle Roasted Artic Char Recipe.

WHAT YOU NEED


4 small yellow squash (zucchini or other summer squash are great substitutes)

½ small red onion, diced

⅓ cup apple cider vinegar

¼ cup olive oil

Pinch red pepper flakes

¼ tsp chipotle powder

½ bunch cilantro, chopped

himalyan pink salt

ground black pepper

LET'S MAKE THIS!


To dice the squash: trim the ends off, then cut the yellow parts of the squash off, leaving a rectangular prism of white seedy parts

(discard or use in a squash muffin, etc). Cut the yellow edges of the squash into small dice.

(The seeds will make the salsa an unpleasant texture and too watery!)

Combine the ingredients and season with salt and pepper to taste.
