Dairy Free Pitaya Parfait

Erika Ritchie, mama of four, and the amazing women behind the blog SimplyLowCal collaborated with us to create this stunning dairy free Pitaya Parfait using some of our local products in our online farmer's market. This parfait is creamy and delicious, can be enjoyed as breakfast or even desserts.

WHAT YOU NEED

4 dates, pitted

½ tsp cinnamon

1 1/2 cups cubed dragon fruit, frozen

1 ½ cups cubed mangoes, frozen

1 medium banana, frozen

2 tbsp pitaya powder

1 cup unsweetened vanilla almond milk

LET'S MAKE THIS

Place pitted dates and cinnamon in food processor until dates are no longer chunky.

Divide crust into the bottom of two glasses.

Add the fruit and almond milk to food processor or blender

Blend until fruit is smooth and to desired consistency.

Divide fruit mixture, filling the two glasses over the crust.

Top with an assortment of fruit, such as blueberries, kiwi and mango.
