This smokey and slightly spicy fish recipe is a real crowd pleaser and only take 20 minutes from start to finish. Enjoy the fish on it's own OR add to fish tacos, or a salad.

WHAT YOU NEED
1.5 lb arctic char (or steelhead or salmon)
Zest of one lime (then cut the lime in half)
1 ½ tsp pink himalayan salt
1 ½ tsp chipotle powder
½ tsp black pepper

LET'S MAKE THIS!
Preheat the oven to 425 degrees
Line a baking sheet with parchment paper.
Make the dry rub: combine the lime zest, salt, chipotle powder and black pepper.
Pat the fish dry with a paper towel.
Squeeze half the lime over the fish and then sprinkle on the dry rub.
Let marinate for 10-15 minutes
Roast the fish for about 8-10 minutes until flaky.
You could make fish tacos with my Summer Squash Salsa, or serve the fish alongside a grain like farro, rice, or even couscous
