At my house we always have bananas lying around, but sometimes all of them don't get eaten. One of my (and my boys) favorites things to do with old stinky bananas is to make banana bread. The trick is to make sure the bananas are old, almost all black, because that's when they are the sweetest. We made this recipe both grain free and nut free using cassava flour, which does a great job at mimicing traditional all purpose flour.

WHAT YOU NEED
3 bananas
4 eggs
1/2 cup cassava flour
1 tsp baking sods
1 tsp salt
1 tsp cinnamon
chocolate chips of your choice
1 tbsp maple syrup
1/4 cup coconut sugar
LET'S MAKE THIS
preheat oven to 350
blend ingredients together in a mixing bowl (except the coconut sugar)
line baking loaf pan with parchment paper
pour batter into the dish
sprinkle coconut sugar over the top of the batter
bake for 40-50 minutes or completely
remove from pan
let cool for 10 minutes before slicing or eating
