We adapted our original grain free, nut free Chocolate Chip Banana Bread recipe into this Holiday version. Just a few different spices and you have the perfect Gingerbread Banana Bread. We also added a bonus recipe for Dairy Free Caramel sauce you can drizzle on top for a little extra YUM.

WHAT YOU NEED
1/2 cup cassava flour
1 tsp baking sods
1 tsp salt
1 tsp cinnamon
1 tbsp maple syrup
2 tsp ground ginger
1 tsp ground cloves
dash of ground black pepper
1/4 cup coconut sugar
Dairy Free Caramel
1 can of coconut cream
1 cup coconut sugar
LET'S MAKE THIS
preheat oven to 350
blend ingredients together in a mixing bowl (except the coconut sugar)
line baking loaf pan with parchment paper
pour batter into the dish
sprinkle coconut sugar over the top of the batter
bake for 40-50 minutes or completely
remove from pan
let cool for 10 minutes before slicing or eating
for Dairy Free Caramel
pour coconut cream and coconut sugar into a small sauce pan
bring mixture to a boil, stirring occasionally
mixture will get thicker, maybe take between 35-45 minutes.
pour mixture of top of of banana bread once done baking.
