These Vegan, Raw Pumpkin Cheesecake bars use cashews to create a creamy, milky texture similar to traditional cheesecake.

WHAT YOU NEED
baking dish
parchment paper
2 cups raw cashews
1 can puree pumpkin
1/4 cup maple syrup
1 tbsp Fall Spice Blend
1/4 cup dairy free milk (we love using our Pumpkin Spice Mylk)
1 bag Becca's Petities Original Snack Mix
LET'S MAKE THIS
soak cashews in a bowl full of water for 4-6 hours to soften
drain cashews and add to a food processor with...
pumpkin puree, maple syrup, fall spice blend, & dairy free milk
blend until smooth
line the baking dish with parchment paper
cover the bottom with the snack mix
pour pumpkin "cheese" cake mixture into baking sheet, on top of the snack mix
place in the freezer for 2 hours, or in the fridge for 6-8
remove parchment from baking sheet
cut into squares or slices and enjoy!
