Vegan, Raw Pumpkin "Cheese" Cake Bites

It can be challenging being dairy free, or vegan with the holidays approaching it can be a challenge to enjoy that dessert table, but don't worry we have you covered on a egg free, dairy free dessert that is hella delicious and requires no baking at all. These Vegan, Raw Pumpkin Cheesecake bars use cashews to create a creamy, milky texture similar to traditional cheesecake.

baking dish

parchment paper

2 cups raw cashews

1 can puree pumpkin

1/4 cup maple syrup

1/4 cup dairy free milk (we love using our Pumpkin Spice Mylk)


soak cashews in a bowl full of water for 4-6 hours to soften

drain cashews and add to a food processor with...

pumpkin puree, maple syrup, fall spice blend, & dairy free milk

blend until smooth

line the baking dish with parchment paper

cover the bottom with the snack mix

pour pumpkin "cheese" cake mixture into baking sheet, on top of the snack mix

place in the freezer for 2 hours, or in the fridge for 6-8

remove parchment from baking sheet

cut into squares or slices and enjoy!
