Sweet Potato Churro Balls

Not only are you going to love these balls in your mouth but they are also packed with sweet potatoes and super foods. They are refined sugar free but still taste like that classic treat.

WHAT YOU NEED

electric mixer or a bowl and spatula

small bowl

small plate

1 sweet potato

2 cups rolled oats

1 1/2 cup almond flour

1/2 cup maple syrup

1/2 cup of your favorite butt butter...oh, wait i mean nut butter

2 cups coconut sugar

1 cup coconut oil

cinnamon

optional

2 scoops collagen peptides

1/4 tsp ashwaganha

MAKE

preheat oven to 400

wash and stab sweet potato a couple of times with a fork

roast in the oven for 40 min

let sweet potato cool on the counter

once cool, remove skin from sweet potato

add to mixer with: oats, almond flour, maple syrup, nut butter, a TON of cinnamon, and optional items.

mix

grab out a small handful, roll into a ball and place on a plate

continue until all batter is gone

put balls in the fridge for 10-15 min

melt coconut oil in a small bowl

on a small plate add a TON more cinnamon and coconut sugar

take balls out of the fridge

roll ball into coconut oil and then cover with cinnamon sugar mixture

repeat with all balls

try and put them back in the fridge for 5 min before devouring!
