Pink Pitaya Smoothie

This smoothie is a great way to sneak in some extra veggies, since the fruit and pink pitaya color do a great job balancing the vegetable taste. Pink pitaya or pink dragonfruit is probably one of the prettiest produce out there. It's vibrant pink color makes it a great natural food dye.

WHAT YOU NEED

1/3 cup blueberries*

1/2 banana*

1/4 small sweet potato*

About 1 cup cauliflower (steamed then frozen)*

2 tsp pitaya powder

1 scoop collagen peptides (optional, remove for vegan smoothie)

1 serving plant-based vanilla protein 

2/3 cup almond milk

*frozen ingredients

TOPPINGS

1 tbsp chia seeds

1 tsp cacao nibs

1 tbsp nut butter of choice 

1/3-1/2 cup dairy free yogurt

MAKE

blend all ingredients other than the toppings

add to a glass with yogurt of choice

add the toppings like it's a fricken ice cream sundae!
